Process flow

  1. First brush wash

Remove field soil with a roller-brush wash stage.

  2. Brush peeling

Peel with controlled brush contact and water spray.

  3. Second brush wash

    Rinse peeled roots before inspection.

  4. Inspection and cutting

Manual sorting, then slicing, dicing or strip cutting.

  5. Vortex wash and blanch

Rinse cut pieces, then blanch for color protection.

  6. Final wash and dewater

Vortex rinse, continuous dewatering and vacuum packing.

What to prepare

  • Crop variety, size range, soil load and skin condition
  • Cut format, dimensions and tolerance
  • Target output and operating schedule
  • Water supply, drainage, power and room plan

The line is built around the root crop: soil load and skin condition set the brush pressure, the cut format sets the cutting head, and the blanching stage locks color and enzyme activity before dewatering and vacuum packing.

Engineering and process considerations

  • Firm roots tolerate more brush contact than soft roots, so brush pressure and residence are matched to the crop.
  • Blanching time and temperature are fixed per product to protect color without overcooking the surface.
  • Water renewal and drainage are laid out so removed soil does not re-contact clean, cut product.
  • The dewatering stage is sized to a defined residual moisture so the vacuum pack stays stable in storage.

Line FAQ

Mixed root fresh-cut FAQ

Can it run different root vegetables on one line?
Yes, within a declared size band. Brush, cutter and blanch settings are stored per product and switched by the recipe.
Is blanching always included?
It is standard for color and shelf-life protection, and can be bypassed for products packed raw.
What water quality is required?
Potable water with a defined renewal and drainage basis, agreed in the process design.

How the line is balanced

  1. Define the product basis

Crop, incoming condition and the finished condition you sell fix every downstream stage.

  2. Balance each handoff

Each stage is sized so its output matches the next machine's feed, with no hidden bottleneck.

  3. Fix utilities and layout

Water, drainage, power, heat and operator access are drawn together before the layout is frozen.

  4. Verify on representative material

A product trial confirms washing, cutting, drying or freezing results before shipment.

Acceptance criteria

  • Cut size and tolerance at the cutter discharge
  • Blanch color and texture after cooling
  • Residual moisture before vacuum packing
  • Damage and loss rate on peeled roots

Selection inputs

  • Product and incoming condition
  • Target output and operating schedule
  • Utilities, water and available footprint
  • Finished condition and downstream handoff

Most mixed-root lines pay back fastest when the cut format matches one high-volume SKU, so changeovers stay short and the line runs at full capacity.
